Fish dishes have always been a pride of Russian cooks. In the Rus people of sufficient means had in lenten days on the table: boiled spike, stewed breams, sterlets, mince fish, stuffed beluga, baked sturgeon garnished with various sauces and dressings. Fish has never left Russian table, being a delicacy and a simple food.
