I received such a great response on my first renewed newsletter that felt ashamed for my silence. Thanks a lot for your vivid interest and support.
The first recipe comes from Kazakh cuisine. I just tried it myself a week ago and liked it a lot. The dish is called Manty, they are similar to Russian pelmeni, just a bit different :-) Manty can be made with meat, potatoes, and pumpkin filling. The feature is to add a lot of onion and to cook on a steam cooker.

Dough:
3 c flour,
1/2 c water (add more if needed)
1 tb vegetable oil
Forcemeat:
1 kg bacon
1 kg veal
12 ea onions
Some salt and pepper

Chop onion and bacon ((cube-shaped pieces), mix it together and add some salt and pepper. Make dough of water and flour, set aside for 40-50 minutes. By using a rolling pin, roll out dough into a thin sheet. Cut into 10cmX10cm squares, put forcemeat on each of them and pinch together the corners tightly. Place manty on a greased wire rack and cook in a steam cooker for 40 minutes. You can boil them like pelmeni, but they can't be called manty then.
