How are doing there? Winter has already come to our city and today we enjoy these sparkling snow flakes on the roads ;-) By the way, what do you know about Ukraine and its cuisine? I want to assure you, that Ukraine has much more to offer, than just borsch and galuchki ;-) The dishes of Ukrainian cuisine are highly aromatic and contain a wide variety of herbs and spices, including garlic, parsley, dill, mint, mustard, pepper and cinnamon. Fresh bread is provided with all savoury dishes and is of a high quality.

Ukrainian Potato Babka Puff

2 eggs, separated
2 cups hot mashed potatoes
1/3 cup hot cream
1/2 cup cottage cheese
1 tablespoon butter
Salt

Method: Beat the egg yolks into the potatoes. Add the remaining ingredients except the egg whites. Beat vigorously until light. Beat the egg whites until stiff, and fold into the mixture. Spoon the potatoes lightly into a buttered baking dish. Bake in a hot oven (400 degrees F) for 15 minutes, or until well puffed and delicately browned.
