Dear friends,
How are you doing? We have just moved from our country house to a new apartment which smells paints and dust. I am really happy, since we have been waiting for it so long, but I already miss our small cozy house...
Do you know anything about Russian dacha? Dacha is the part of summer lifestyle, favorite hobby for many tens of millions; more than just hobby, almost occupation for millions, recreation and country-wide vegetable and friut garden. The typical size of land given by the state in the Soviet time to a family varied from 4 to 12 "sotok", 6 and 8 being the most common. One "sotka" = 100 square meters.
Russian town-dweller are divided into those who already have dachas and those who do not but do want. And our new dream is to have a small house somewhere in the country at the Volga riverside.
But enough about that. Let's cook a really delicious dish which is cooked in exclusive Russian restaurants.

Duck liver with Mango

Ingredients: (2)
200 g duck liver
150 g apples
150 g mango
20 g sugar
basil
butter
cognac to taste
50 g sauce made of mango juice, vinegar, sugar and beef stock

Method:

Dice the apples and mangoes and fry them with sugar and butter. Add a splash of cognac according to your own preference. Lightly cover the duck liver in flour and fry separately.
To make the suace, add some sugar to some vinegar and caramelize the mixture. Then add mango juice and beef stock and continue to cook on a low heat. Finally, add a little bit of butter. Simmer gently and stir until the mixture is consistent.
Serve the duck liver on top of the bed of fried apple and mango. Pour the suace around the meal, not over it. Garnish with basil.
