Honey Cake recipe

1 cup buckwheat honey, melted
1/2 cup butter, softened
1 cup dark brown sugar
4 eggs, separated
3 cups sifted cake flour
2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 cup warm coffee

Bring honey slowly to a boil, and cool. Cream the butter and sugar. Add egg yolks, beat until light and fluffy. Beat in honey. Sift flour with dry ingredients; add alternately with warm coffee. Make sure there is no egg yolks in the whites. Beat egg whites until stiff, and fold them into the batter. Bake in a greased and floured bundt pan at 325F for 50 minutes, then reduce heat to 300F, until toothpick comes out clean. Buckwheat honey is very strong. It takes a bit of getting used to if you are not. I prefer it to regular clover honey any day.
