Mushroom Soup recipe


From time immemorial various mushroom dishes have been part of Russian cooking. Mushrooms are served both as ingredients in soups and the main course, and as dishes in their own right. Mushrooms can be preserved by salting, pickling or drying. I love mushrooms - fried, boiled, pickled, everything mushroomed is good for me.

Ingredients:
3 qrt water
3 cups mushrooms
2 large carrots
1 stalk celery
1 onion
5 large potatoes
1 bunch parsley
1 bunch green onions
salt & pepper to taste

Method:
Clean and slice mushrooms, carrots, celery, onion, and potatoes. Fry onion and carrots in oil until golden. Ñook 3 cups mushrooms with 1/4 stick of butter in 3 l water until tender, then add other ingredients. Add parsley and green onions. Cook a few more minutes. Salt and pepper to taste. To make noodle soup, add 1 cup egg noodles with parsley and green onions.
