Russian fish soups have their own specialty as other seaside country. Most known and appreciated ones are ukha and fish solyanka. True ukha is cooked on the open fire from fresh-fished fishes and is so delicious and tender that you can't resist to eat a plate or even two. Fish solyanka is a mixture from different fish kinds with pickles and lemon juice. Fish solyanka if cooked with imagination and sense of proportion can become a real cooking chef d'oeuvre if you are far from being professional.
