Although this seems like another vegetarian wanna-be fake burger, beet patties are actually a very old Russian creation. And, although I have always been a confirmed meat-lover, this was one of the favorite foods of my childhood. It was a real treat for me whenever my mother made them. Generally, beet patties seem to be popular with children. Even if you are a carnivore with a suspicion for anything vegetarian, give them a try -- you won't regret it.
Ingredients:
1 lb fresh beets, roasted and peeled
1/2 cup cream of wheat
1 large egg, lightly beaten
dried bread crumbs
vegetable oil
salt and pepper to taste

Method:
While the beets are still hot, shred them and transfer to a deep skillet with a small amount of vegetable oil. Cook, covered, for approximately 10 minutes.
Uncover and add the cream of wheat in a small stream, stirring constantly. Cover and cook, stirring occasionally, until the mixture thickens.
Remove from heat and cool to a temperature at which the egg would not curdle. Add the egg, season with salt and pepper, and mix well.
Shape oval patties, approximately 3/4 inch thick, roll in bread crumbs, and fry in vegetable oil, about 4 minutes per side.
Serve with sour cream or horseradish sauce.
