Medyanki recipe

"Medyanki" is a delicious Ukrainian cookie. You can make it with all the family, cutting out cute animals.

8 lg separated eggs
6 tb butter
14 oz honey
2 c sugar
6 c flour
2 ts baking powder
2 ts cinnamon
1 c strong coffee
1 c sour cream
1 c chopped walnuts
zest of 1 lemon

Heat the honey to boiling in double boiler and allow to cool. Separate the eggs, saving the whites. Beat yolks with the butter until fluffy. Add the cooled honey and beat until blended. Add the sugar and blend well. Sift the flour, baking powder and cinnamon together. Add to the honey mixture. Add the lemon zest, coffee and sour cream. Stir thoroughly until no dry flour. Whip the egg whites and fold in a the whites slowly, mixing well. Pour into buttered and floured loaf pans, rapping them to even the batter. Bake in a preheated oven for 1 hour. Do not open the oven door during the first 20 minutes of baking. Cool on wire racks for 10 minutes, then turn out to finish cooling. Wrap well in heavy duty aluminum foil and store in the refrigerator.
