Ingredients:1 lb Cottage cheese
2 ea Eggs beaten
1 tsp Lemon juice
1 tsp Lemon zest
1 c Sour cream
1 1/2 tb Sugar
4 Tbsp Flour
1/2 tsp Salt
1/2 tsp Cinnamon

Method:
Squeeze all moisture from cottage cheese in a cheesecloth bag.
Put cheese through a fine seive and mix with the eggs, sugar, flour, lemon zest, lemon juice, 3 Tb of sour cream. Add the flour by the spoonful mixing continuously and mix until it is very smooth and thick. Refrigerate covered for 1-hr. then using a melon scoop scop-out balls & place on a floured surface. Press these balls into flattened, oval patties approx. 3/4 thick and fry on both sides in pre-heated butter. Serve immediately after placing dollops of sour cream over each serving.
