Varenyki Fillings recipe

Ingredients:
-----------------------CHERRY FILLING---------------------
16 oz Cherries, tart red pitted 6 tb Butter melted
-canned or dried or fresh 1 pt Sour cream
1/4 ts Cinnamon
3 tb Cornstarch
9 tb Sugar

-----------------------APPLE FILLING----------------------
2 ea Apples, cored & peeled 1 ts Lemon juice fresh
1 ts Cinnamon powder 2 tb Butter


--------------------STRAWBERRY FILLING------------------
1 c Straberries chopped 1 ts Lemon juice fresh
1 tb Sugar or Equal(tm)


---------------------BLUEBERRY FILLING--------------------
1 c Blueberries crushed 1 tb Sugar or Equal(tm)


-------------------PLUM OR PRUNE FILLING------------------
1 c Plums pitted & chopped 1 ts Sugar or Equal(tm)
1 ts Lemon juice fresh


----------------BLACKBERRY-RASPBERRY FILLING------------
1 c Blackberries or raspberries 1 tb Sugar or Equal(tm)
- crushed 1 ts Lemon juice


----------------------CHEESE FILLING----------------------
2 qt Cottage cheese large curd - low fat is ok


----------------------POTATO FILLING---------------------
1 1/2 c Mashed potatoes 1/4 c Onions minced & sauteed

Note: Make sure that each ts is "heaping" in size!

Method:
Cherry Filling: Boil pitted cherries with 1 tablespoon of sugar, unless canned, for 15 minutes. Drain cherries and save some of the liquid (approx. 1 cup) Mix cherries, the reserved liquid, sugar, cinnamon. Mix cornstarch with 1/3 c cold water mix well to dissolve and add to the cherry mixture. Place 1 small spoonful (teaspoon) of cherries into center of dough. ORIGIN: Taisa Kamnatskaya, Kyiv-Ukraine -------- Apple Filling: Chop apples sautee in melted butter, remove, drain and mix well with cinnamon, sugar (Equal(tm), & lemon juice. Place 1 ts of this mixture into each varenyk. Plum/Prune Filling: Mince the plums or prunes, add the sugar & lemon juice. Put 1 ts of this mixture in each varenyk. Other Berry Fillings: Mix berries with suagr or Equal(tm), lemon juice. Place 1 ts in each varenyk. Cheese Filling: Place the cottage cheese into a cheese cloth bag and squeeze as much of the moisture out of the cheese as possible. Place 1 TS of the cheese into each varenyk. Potato Filling: Mix the mashed potatoes and the onions together. place 1 ts of this mixture into each varenyk. ORIGIN: Maya Kamnotsky-Houston, Tampa, FL. circa 1998
