Russian Roast recipe

6 potatoes, cubed
2 onions, sliced
3 tbs vegetable oil
1 lb beef boneless rump roast
1 c sour cream
1/2 cup water
1 tbsp flour
1 tsp lemon juice

Cook and stir potatoes and onions in oil over medium heat until onions are tender, about 10 minutes. Remove potatoes and onions with slotted spoon. Cook beef in remaining oil, turning occasionally, until brown on all sides, about 15 minutes; drain. Add potatoes and onions to beef; sprinkle with water and pepper. Mix sour cream, water and flour with fork until smooth; pour over potato mixture. Heat to boiling; reduce heat. Cover and simmer 1 hour. Stir in lemon juice. Cover and simmer until beef is tender, about 30 minutes longer. Garnish with fresh dill if desired.
