Stuffed Portobello Mushrooms recipe

4 large portobello mushrooms
1 1/2 cups feta cheese, crumbled
2 tbsp fresh chopped garlic
1/4 cup ground almonds
1/2 cup grated carrot
1/4 cup finely chopped white onion
2 tbsp butter
mozarella cheese

Wash and remove stems from mushrooms. Chop the stems up into small pieces. Place mushrooms on a cookie sheet and cook for 5 minutes at 350F. In a pan, melt butter. Add onions and mushroom stems and sautee until soft. Add garlic and cook until garlic is not quite brown. Remove from heat. Stir in almonds and carrots. Add feta cheese and stir mixture well. Fill each mushrom full with the cheese mixture and place sliced mozarella cheese over the top. Cook for 15-20 minutes, until mushrooms are cooked or the cheese is melted on top.
