Kholodnik recipe

2 ea potatoes, peeled and cubed
2 ea beets, cooked, peeled and grated
2 ea cucumbers, grated
green onions
parsley, chopped
salt to taste
1 ea lemon. juice

Boil potatoes in 2 1/2 l water until potatoes are well done. Cool down to the room temperature. Add all ingredients. Be careful with salt, lemon juice and sugar, the stook should be sweet-sour to your taste. The soup is served cold (that is why it is called Kholodnik) with sour cream.
