Draniki (Potatoe Pancakes) recipe

10 ea potatoes
2 ea eggs
salt to taste
vegetable oil

Grate potatoes into mush. Pour off potatoe juice and add the same quantity of milk. Add eggs and salt and mix very well. Pour vegetable oil into a saucer. Some people like to fry Draniki on lard. Heat the pan. Pour 4-5 little rounds of batter evenly. Cook until light brown, about 3-4 minutes on each side. Servings: 4-5. Draniki can be served with butter, sour cream or milk.
