Stewed beans recipe

2 c red beans; soaked overnight in water to cover
2 onions; peeled and chopped
1 carrot; peeled and grated
salt to taste
7 prunes; dried, pitted

In a soup pot, combine the beans with the onion and carrot .Add enough water to cover the beans and bring to a boil. Add the salt to taste, then reduce the heat, cover and simmer the beans until tender (40-50 minutes). Meanwhile simmer the prunes in a saucepan for 15 minutes, remove and cool. Finely chop the prunes. Stir prunes into beans and simmer for 10 minutes. Taste and correct the seasoning.
