Basic Pirozhkiy Sour-Cream Dough recipe


Ingredients:
-DOUGH-
3 1/2 c Flour
2 ea Eggs beaten slightly
1 c Sour cream
1 ts Salt
1/2 c Butter (unsalted)
1 ts Sugar
1 ts Baking powder

Method:
Sift the flour, baking powder, sugar & salt together 3 times. Work small bits of the butter into the flour mixture each time until all butter is used. Add the sour cream to the slightly beatn eggs and mix well. When this mixture is smooth add the flour mixture and work the dough with your hands to remove any and all lumps. Roll the dough out on a floured surface to a 1/4" thickness. Cut 4" x 8" rectangles & place several spoonsful of the filling mixture in the center along the long center-axis. fold the ends up & in, roll the sides up & in, & then roll the pirozh over & place each one seam side down on a well-greased & lightly floured cookie sheet. Brush the top of each pirozh with melted butter & bake in a pre-heated 400-deg F oven for between 12 & 15-mins. Serve hot!
