Baked pirohi recipe


Ingredients:
Dough:
5 medium potatoes, peeled, boiled, mashed
1 cup milk
4 egg yolks, beaten
1/4 tsp salt
1 tsp baking soda for potatoes
4 cups all-purpose flour
1 tsp baking soda, for flour

Filling:
Sauerkraut - chop, squeeze dry, discard liquid
Pork Fat
1 cup chopped onion
Pepper, and salt to taste
1 lb. butter, melted
Fry pork fat and chopped onion, together

Method:
When you mash potatoes, make sure there are absolutely no lumps. Mix potatoes, egg yolks, and the first tsp of baking soda together. Add 1/4 tsp salt. Add alternately, flour and milk, making flour last one to alternate. Remove from bow at this point to a floured surface and knead until smooth. Roll out with rolling pin, 1/8" thick, cut with 2" cookie cutter. Put dough in the palm of your hand, fill with filling, be sure that the filling is off the edges, wet with water and seal pastry. Bake in oven at 350F, until golden brown. When you take pirohis from oven, let cool for 5 minutes, then wet your hands with water, pick up each pirohi, and coat with water from hands, and set aside in pot,  Pour melted butter on top of pot, shake pot and set aside for a bit.
