2 tbsp butter
7 ea ham slices
1 1/2 c wine ("Madeira")
1 1/2 c broth or water
4 ea salted pork fat pieces
3 ea carrots
2 ea onions
3 ea average turnips
1 ea bay leaf
3 c dry white wine
15 ea peppercorns

Mix dry white wine with the same quantity of
water. Cover turkey with it. Add pieces of salted pork fat and
salt. Boil for an hour, add chopped carrots, chopped onions,
chopped turnips and spices. And boil for another hour on a low
Cut turkey into portion slices, add salt if necessary and fry
with ham slices and fat for 20 minutes. Pour in wine "Madeira"
and stew on a very low heat until all juice is gone. Pour in hot
broth or water, stew for 30 minutes .
Indeyka is served with stewed ham slices, fried potatoes, greens.
The rest of sauce is served separately.
