Fried Eggplant & Onions with Sour Cream Sauce recipe

2 ea eggplants
2 ea onions sliced in rings
2 tb flour
4 tb butter
1 c sour cream
1 tb tomato paste
Salt & pepper to taste

After cutting the ends off of the eggplant, scald it in boiling water, slice Into quarters, slice again into thin slices, roll in the flour, & fry in 2 tb of butter. Fry the onion rings in separate skillet in the remaining butter until they are beginning to brown. Place the eggplant & onion rings on a platter alternately and pour the sauce over them. SAUCE: In the skillet in which the eggplant was cooked mix the tomato paste, salt, Pepper & sour cream.
