Vesenny (Spring) Salad recipe

2 bunches sweet radishes, ends trimmed;
3 kirby cucumbers, peeled;
2 hardboiled eggs, minced;
1 small bunch scallions, minced;
3 tbsp fresh dill weed, minced (tough stems removed);
1/2 cup sour cream;
salt and freshly ground pepper to taste

Halve the radishes (or quarter them, depending on the size), then slice thinly. Slice the cucumbers in half lengthwise. Scoop out the seeds and soft pulp, and discard. Slice the cucumber halves thinly across. Toss the radishes, cucumbers, eggs, scallions, and dill weed in a bowl. Cover and chill in the refrigerator at least 30 minutes and up to 2 hours. Before serving, season with salt and pepper, add sour cream, and mix well.
