Kartoshnik recipe


Ingredients:
3 large potatoes, peeled and cut into pieces
4 large eggs
1/4 cup whipping cream
3/4 tsp. salt
3/4 cup grated sharp cheddar cheese
3/4 cup grated Swiss cheese
1 medium onion, chopped small
3 tsp. baking powder

1/2 cup melted butter
1/2 cup sour cream or plain yogurt
1/2 cup finely chopped green onions or chives

Method:
In a medium size saucepan, add potatoes, cover with water and boil until cooked. When done, drain water and discard. Mash potatoes and set aside. Preheat oven to 450 F. In a mixing bowl, beat eggs, then add whipping cream, salt and whisk until blended. Add mashed potatoes and mix until well blended. Add both cheese and onion and stir well to mix. Now add baking powder and mix well to dissolve. Prepare a 9" x 9" oven-proof baking dish or casserole dish by spraying with a vegetable spray or rub interior with butter or olive oil. Pour potato mixture into prepared dish and level. Bake in preheated 450 F oven for 35 minutes or until top has a nice light brown color. The Kartoshnik will rise but will settle when removed form oven and cooled for about 5 minutes. Meanwhile, melt 1/2 cup butter to be used on Kartoshnik squares. Cut Kartoshnik into squares, about 3" x 3" and serve with melted butter, a dollop of sour cream or yogurt and a sprinkling of chopped green onions. You may also sprinkle with some bacon bits. The Kartoshnik looks like a cake when baked, but is eaten like a potato.
